2 cups chicken broth

1 lb boneless, skinless chicken breasts, diced into bite-sized pieces

2 cups fresh broccoli florets

2 tablespoons extra virgin olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and black pepper to taste

1 cup shredded sharp cheddar cheese

½ cup grated Parmesan cheese

2 tablespoons unsalted butter

Optional: red pepper flakes for a spicy kick

Cook the Rice: In a medium-sized saucepan, combine 1 cup of jasmine rice with 2 cups of chicken broth. Bring the mixture to a rolling boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for about 15 minutes, or until the rice is tender and all the liquid has been absorbed. Once done, fluff the rice with a fork and set it aside.

    Prepare the Chicken: While the rice is cooking, heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced chicken pieces to the skillet, and season them with 1 teaspoon of garlic powder, 1 teaspoon of onion powder, along with salt and black pepper to taste. Cook the chicken for approximately 7-10 minutes, stirring occasionally, until it is completely cooked through and lightly golden.

      Add Broccoli: Once the chicken is cooked, add the 2 cups of fresh broccoli florets to the skillet. Cover the skillet with a lid and let the broccoli steam for an additional 5 minutes on medium heat, or until the broccoli is bright green and tender but still has a slight crunch.

        Combine Ingredients: After the broccoli reaches the desired tenderness, reduce the heat to low. Stir in the cooked rice, followed by the 2 tablespoons of unsalted butter, 1 cup of shredded sharp cheddar cheese, and ½ cup of grated Parmesan cheese.
