Cheesy Beef and Broccoli Stir-Fry

1 lb (450g) beef sirloin, thinly sliced against the grain

2 cups fresh broccoli florets

1 medium onion, thinly sliced

3 cloves garlic, minced

1 cup shredded sharp cheddar cheese

2 tablespoons soy sauce

1 tablespoon oyster sauce (optional for added depth)

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 teaspoon sesame oil

Salt and freshly ground black pepper to taste

Cooked rice or noodles, for serving

Prepare the Beef: In a medium mixing bowl, combine the thinly sliced beef with soy sauce, oyster sauce (if using), cornstarch, and a pinch of salt and pepper. Mix thoroughly to ensure the beef is evenly coated. Allow the beef to marinate for about 15 minutes to absorb the flavors.

    Blanch the Broccoli: While the beef is marinating, fill a large pot with water, add a generous amount of salt, and bring it to a rolling boil. Carefully add the broccoli florets and blanch them for 2-3 minutes, or until they are bright green and slightly tender. Drain the broccoli in a colander and run cold water over it to stop the cooking process. Set aside.

      Stir-Fry the Beef: In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering. Add the marinated beef in a single layer, allowing it to cook undisturbed for 2-3 minutes to achieve a nice sear. Continue stir-frying the beef until it is browned and cooked through, which should take an additional 2 minutes. Once done, remove the beef from the skillet and set it aside on a plate.

        Sauté Vegetables: In the same skillet, add the sliced onion and sauté for about 2 minutes, or until the onions become translucent. Next, stir in the minced garlic and cook for an additional minute, stirring frequently, until fragrant.

          Combine Ingredients: Return the cooked beef to the skillet and add the blanched broccoli. Drizzle the sesame oil over the mixture and gently toss everything together until well combined. Cook for another 2-3 minutes, allowing the flavors to meld as everything heats through.

            Add Cheese: Remove the skillet from heat and evenly sprinkle the shredded cheddar cheese over the beef and broccoli mixture. Immediately cover the skillet with a lid or foil for a couple of minutes, allowing the cheese to melt and become gooey.
