1 medium onion, diced

2 cloves garlic, minced

4 cups fresh broccoli florets

1 medium potato, peeled and diced

4 cups vegetable broth

1 cup heavy cream

2 cups shredded sharp cheddar cheese

4 large round bread loaves (sourdough or boule preferred)

Optional toppings: croutons, extra cheese, fresh chives

Sauté Aromatics: In a large pot, add the olive oil and heat over medium heat. Once hot, add the diced onion. Cook for about 5 minutes, stirring occasionally, until the onion becomes translucent. Then, add the minced garlic and continue cooking for another minute, until fragrant.

    Add Veggies: Incorporate the fresh broccoli florets and diced potato into the pot. Sauté the mixture for 2-3 minutes, allowing the veggies to soften slightly and absorb the flavors.

      Simmer: Pour in the vegetable broth and bring the mixture to a rolling boil. Once boiling, reduce the heat to a low simmer, cover the pot, and cook for 15-20 minutes until the broccoli and potatoes are tender.

        Blend the Soup: After cooking, carefully use an immersion blender to puree the soup to your preferred consistency. For a heartier texture, blend only half of the soup and leave some vegetable chunks.
