1 medium onion, finely chopped

3 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 pound carrots, peeled and chopped into bite-sized pieces

4 cups vegetable broth (or chicken broth, if preferred)

1 can (13.5 oz) coconut milk

1 teaspoon ground cumin

1 teaspoon turmeric powder

Salt and pepper, to taste

Juice of 1 lime

Fresh cilantro, chopped, for garnish

Red pepper flakes (optional, for an extra kick)

Instructions
 

Sauté Base: In a large pot, heat the coconut oil over medium heat until melted. Add the chopped onion and sauté for about 5 minutes, stirring occasionally, until the onion becomes soft and translucent.

    Add Aromatics: Stir in the minced garlic and grated ginger. Cook for an additional 2 minutes, or until the garlic is fragrant, being careful not to let it burn.

      Incorporate Carrots: Add the chopped carrots to the pot along with the ground cumin and turmeric. Mix well, ensuring the carrots are evenly coated with the spices.

        Pour in Broth: Carefully pour in the vegetable broth and increase the heat to bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes, or until the carrots are fork-tender.

          Blend the Soup: Once the carrots are tender, remove the pot from heat. If you’re using an immersion blender, blend the soup directly in the pot until smooth and creamy. Alternatively, if using a traditional blender, carefully transfer the soup in batches and blend until smooth, then return to the pot.

            Add Coconut Milk: After blending, if using a traditional blender, return the soup to the pot on low heat. Stir in the coconut milk, allowing the soup to warm for an additional 5 minutes to let the flavors combine.

              Season: Taste your blissful soup and season it with salt, pepper, and the freshly squeezed lime juice. Adjust the seasoning to suit your palate.
