1 cup milk

2 tablespoons olive oil

1 large onion, thinly sliced

8 ounces cremini or button mushrooms, sliced

1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)

Salt and pepper, to taste

1/2 cup grated mozzarella cheese (optional)

Fresh parsley, chopped (for garnish)

Preheat the Oven: Set your oven temperature to 375°F (190°C) to ensure it's ready for baking the frittata.

    Caramelize the Onions: In a large oven-safe skillet, heat the olive oil over medium heat. Add the thinly sliced onions and cook slowly, stirring occasionally, for approximately 15 minutes. The onions should turn a deep golden brown and become caramelized. If they begin to stick to the pan, add a splash of water or a bit more olive oil to maintain moisture.

      Add the Mushrooms: Once the onions are beautifully caramelized, incorporate the sliced mushrooms into the skillet. Sauté them for about 5-7 minutes until they soften and any liquid released has evaporated, allowing them to blend harmoniously with the onions.

        Mix the Eggs and Milk: In a large mixing bowl, whisk together the eggs and milk until fully combined. Add in the thyme, along with a generous seasoning of salt and pepper.

          Combine Ingredients: Carefully pour the egg mixture over the caramelized onions and mushrooms in the skillet. Gently stir to ensure even distribution of the vegetables. If you're using mozzarella cheese, sprinkle it evenly over the top.
