Butternut Squash Spinach Lasagna

12 lasagna noodles (whole wheat or gluten-free)

2 cups butternut squash, peeled and diced into 1/2-inch cubes

1 tablespoon olive oil

3 cups fresh spinach, roughly chopped

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

2 cups ricotta cheese

1 ½ cups shredded mozzarella cheese, divided

1 cup grated Parmesan cheese, divided

1 large egg

Salt and pepper to taste

1 jar (about 24 oz) marinara sauce

Fresh basil leaves for garnish

Preheat the Oven: Start by preheating your oven to 375°F (190°C), ensuring it's ready for baking.

    Cook the Lasagna Noodles: Bring a large pot of salted water to a boil. Carefully add the lasagna noodles and cook according to the package instructions until al dente. Drain the noodles and set them aside, laying them flat on a clean surface to prevent sticking.

      Prepare the Butternut Squash: In a medium skillet, heat the olive oil over medium heat. Add the diced butternut squash, then season with salt and pepper. Sauté for about 5-7 minutes until the squash is slightly softened but still holds its shape. Remove it from heat and set aside.

        Sauté Onion and Spinach: In the same skillet, add the finely chopped onion. Sauté for approximately 3-4 minutes or until translucent and fragrant. Stir in the minced garlic, dried oregano, and thyme, cooking for an additional minute. Next, add the chopped spinach and continue to sauté until wilted, about 2-3 minutes. Remove the skillet from heat.

          Make the Ricotta Mixture: In a separate mixing bowl, combine the ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan. Add the egg, and season with a pinch of salt and pepper. Mix thoroughly until the mixture is completely smooth and well combined.

            Assemble the Lasagna: Spread a thin layer of marinara sauce over the bottom of a 9x13-inch baking dish. Lay down 3 lasagna noodles over the sauce. Spread half of the ricotta mixture evenly over the noodles, followed by half of the sautéed butternut squash and spinach. Top this layer with more marinara sauce. Repeat the layering process once more, starting with the noodles and finishing with a final layer of noodles topped with marinara sauce. Sprinkle the remaining mozzarella and Parmesan cheese evenly over the top.

              Bake the Lasagna: Cover the baking dish tightly with aluminum foil. Bake in the preheated oven for 25 minutes. After this time, carefully remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbling and golden brown.

                Cool and Serve: Once baked to perfection, remove the lasagna from the oven and let it cool for about 10-15 minutes to set. Before serving, garnish generously with fresh basil leaves for an aromatic finish.
