Buffalo Chicken Egg Rolls

2 cups shredded cooked chicken (preferably from a rotisserie)

1/2 cup Buffalo wing sauce (adjust according to your spice preference)

1/2 cup cream cheese, softened at room temperature

1 cup shredded cheddar cheese

1/2 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

12 egg roll wrappers

Oil for frying (vegetable or canola oil recommended)

Optional: blue cheese or ranch dressing for dipping

Prepare the Filling: In a large mixing bowl, combine the shredded chicken, Buffalo wing sauce, softened cream cheese, shredded cheddar cheese, chopped green onions, garlic powder, onion powder, salt, and pepper. Mix thoroughly until all ingredients are well incorporated and the filling is creamy and cohesive.

    Assemble the Egg Rolls: Lay an egg roll wrapper on a clean work surface so that one corner points towards you, forming a diamond shape. Place about 2 tablespoons of the prepared filling in the center of the wrapper. Starting from the bottom corner, fold it over the filling. Then, fold in the sides, and roll tightly towards the top corner to seal. Use a small amount of water on your fingers to dampen the edges before sealing to ensure they stick well. Repeat this process with the remaining egg roll wrappers and filling.

      Heat the Oil: In a deep frying pan or a heavy-bottomed pot, pour in approximately 2 inches of oil and heat it over medium-high heat until it reaches a temperature of 350°F (175°C). To check if the oil is hot enough, you can drop a small piece of bread into the oil; it should sizzle and bubble if ready.

        Fry the Egg Rolls: Carefully add 3 to 4 egg rolls into the hot oil, ensuring not to overcrowd the pan. Fry for about 3 to 4 minutes on each side or until they achieve a golden brown color and become crispy.
