Ingredients

2 cups granulated sugar

1 cup heavy cream

1/2 cup unsalted butter, cut into cubes

1/2 cup light corn syrup

1 teaspoon pure vanilla extract

1 cup semi-sweet chocolate chips

1/2 cup powdered sugar, for dusting

1/4 cup whole milk

1 teaspoon instant coffee granules (optional, for depth of flavor)

Pinch of sea salt

Instructions

Prepare the Pan: Begin by lining an 8x8 inch square baking dish with parchment paper, ensuring to leave some overhanging edges to aid in lifting out the fudge later. Lightly grease the parchment paper with cooking spray or a small amount of butter to prevent sticking.

Make the Fudge Base: In a medium-sized saucepan, combine the granulated sugar, heavy cream, unsalted butter cubes, corn syrup, and a pinch of sea salt. Place the saucepan over medium heat. Stir continuously until the sugar dissolves and the mixture begins to boil.

Cook the Mixture: Allow the mixture to boil without stirring for approximately 5-6 minutes. You'll want to monitor it closely until it reaches the soft-ball stage, which is around 235°F (118°C) on a candy thermometer. Once it reaches this temperature, promptly remove the saucepan from the heat.

Add Vanilla: Carefully stir in the pure vanilla extract. Allow the mixture to sit for about a minute, permitting it to cool slightly before proceeding.

Beat the Fudge: Using a hand mixer or a stand mixer fitted with a paddle attachment, beat the fudge mixture at medium speed for about 5-7 minutes. The fudge will thicken and become creamy, losing its glossy sheen in the process.

Pour the Fudge: Quickly transfer the fudge to the prepared baking dish. Use a spatula to smooth it out evenly. Allow the fudge to cool completely at room temperature before moving to the next step.

Prepare the Chocolate Ganache: In a separate small saucepan, gently heat the whole milk over medium heat until warm. Remove from heat, then add the semi-sweet chocolate chips and instant coffee granules (if using). Stir continuously until the chocolate is fully melted and the ganache is silky smooth.

Spread the Ganache: Once the fudge has cooled and set, pour the prepared chocolate ganache over the top, spreading it out evenly with a spatula.

Chill and Set: Place the dish in the refrigerator for approximately 2 hours, allowing the ganache to firm up completely.

Serve: Once the ganache is set, use the parchment overhang to lift the fudge out of the pan. Cut into generous squares and for an elegant touch, dust with a sprinkle of powdered sugar before serving.

                        - Presentation Tips: For a delightful presentation, serve the fudge on a decorative plate with fresh strawberries or raspberries on the side. A drizzle of extra ganache can also add visual flair!
