Ingredients

8 slices of thick-cut brioche bread

1 cup fresh blueberries (plus extra for garnish)

4 oz cream cheese, softened

2 tablespoons powdered sugar

1 teaspoon vanilla extract

4 large eggs

1 cup milk

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

2 tablespoons unsalted butter (plus more as needed)

Maple syrup (for drizzling on top)

Fresh mint leaves (for garnish, optional)

Instructions

Prepare the Filling: In a medium mixing bowl, blend together the softened cream cheese, powdered sugar, and vanilla extract until smooth. Gently fold in half of the fresh blueberries, mashing them slightly with a fork to create a cohesive yet textured filling with small blueberry chunks throughout.

Assemble the French Toast: Take two slices of brioche bread and spread a generous layer of the blueberry cream cheese mixture between them, forming a sandwich. Repeat this process for the remaining slices of bread, creating a total of four stuffed sandwiches.

Prepare the Egg Mixture: In a separate large bowl, whisk together the eggs, milk, ground cinnamon, and ground nutmeg until the mixture is fully blended and slightly frothy.

Coat the Sandwiches: Heat a large skillet over medium heat. Add 1 tablespoon of unsalted butter to the pan and allow it to melt. Dip each stuffed sandwich into the egg mixture, ensuring it soaks for about 10 seconds on each side, allowing the bread to absorb the flavors. Carefully place the soaked sandwiches in the heated skillet.

Cook the French Toast: Fry the stuffed sandwiches for approximately 4-5 minutes on each side, or until each side is golden brown and crispy. If the skillet gets too dry, add additional butter as needed to keep the sandwiches from sticking.

Serve: Once cooked, transfer the French toast to a plate and let them rest briefly on a paper towel to absorb any excess butter. Serve warm, topped with additional fresh blueberries, a light dusting of powdered sugar, and a generous drizzle of maple syrup. For an extra touch, garnish with fresh mint leaves if desired.
