2 lbs pork tenderloin

2 cups fresh blackberries

1/2 cup balsamic vinegar

1/4 cup honey

2 tablespoons Dijon mustard

3 cloves garlic, minced

1 teaspoon fresh rosemary, chopped (or 1/2 teaspoon dried)

1 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons olive oil

Fresh rosemary sprigs for garnish (optional)

Marinate the Pork: In a mixing bowl, whisk together the balsamic vinegar, honey, Dijon mustard, minced garlic, chopped rosemary, salt, and black pepper until well combined. Set aside 1/4 cup of this mixture for use as a glaze later. Place the pork tenderloin in a resealable plastic bag or a shallow dish, then pour the remaining marinade over the pork, ensuring it's evenly coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, or preferably overnight for enhanced flavor.

    Preheat the Oven: Preheat your oven to 400°F (200°C) to get it ready for roasting.

      Sear the Pork: Heat the olive oil in a large oven-safe skillet over medium-high heat. Remove the pork tenderloin from the marinade, letting the excess drip off. Carefully place the pork in the skillet and sear for 3-4 minutes on each side, until it forms a golden brown crust.

        Prepare the Glaze: In a small saucepan set over medium heat, combine the reserved marinade and fresh blackberries. Bring the mixture to a gentle simmer, using the back of a spoon to mash the blackberries slightly as they cook. Allow this mixture to simmer for about 5-7 minutes, or until it thickens just a bit. Remove from heat once done.

          Roast the Pork: After searing, pour half of the blackberry glaze over the pork in the skillet. Transfer the skillet to your preheated oven, and roast for 20-25 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

Once the pork is fully cooked, remove the skillet from the oven and let the pork rest for 5-10 minutes to allow the juices to redistribute before slicing.
