Ingredients

For the Chia Jam:

2 cups mixed berries (choose a delightful combination of strawberries, blueberries, and raspberries)

2 tablespoons maple syrup (adjust based on the natural sweetness of the berries)

2 tablespoons chia seeds

1 tablespoon freshly squeezed lemon juice

1/4 teaspoon pure vanilla extract

For the Bars:

1 cup rolled oats

1 cup almond flour (or substitute with any nut flour of your choice)

1/2 cup honey or maple syrup

1/3 cup coconut oil, melted (allow it to cool slightly before adding)

1 teaspoon pure vanilla extract

1/2 teaspoon baking powder

1/4 teaspoon salt

Instructions

Prepare the Chia Jam:

    - In a medium saucepan set over medium heat, combine the mixed berries, maple syrup, and lemon juice.

      - Cook for approximately 5 to 7 minutes, stirring gently to help the berries break down and create a flavorful sauce.

        - Once cooked, remove from heat and stir in the chia seeds and vanilla extract. Allow the mixture to cool for about 15 minutes, during which it will thicken significantly.

          Preheat the Oven:

            - Preheat your oven to 350°F (175°C). Line an 8x8 inch baking dish with parchment paper, ensuring there is some overhang on the sides for easy removal of the bars.

              Mix the Bar Base:

                - In a large mixing bowl, combine rolled oats, almond flour, melted coconut oil, honey (or maple syrup), vanilla extract, baking powder, and salt.

                  - Stir well until all ingredients are fully integrated and a crumbly dough forms.

                    Assemble the Bars:

                      - Press approximately two-thirds of the oat mixture into the bottom of the prepared baking dish, creating an even, compact layer.

                        - Spread the cooled chia jam evenly over this base, making sure to cover the entire surface.

                          - Sprinkle the reserved oat mixture on top of the chia jam, pressing it down gently to help it adhere.

                            Bake:

                              - Place the baking dish in the preheated oven and bake for 25 to 30 minutes, or until the edges begin to turn golden brown and the top layer appears set.

                                - Once done, remove from the oven and let cool in the pan for at least 15 minutes. Use the parchment overhang to lift the bars out of the dish.

                                  Cool and Slice:

                                    - Allow the bars to cool completely on a wire rack. Once cooled, cut into squares or bars according to your preference.

                                      Serve and Store:

                                        - Enjoy the bars fresh, or store in an airtight container in the refrigerator for up to one week for a delicious, nutritious snack!
