2 lbs beef short ribs, bone-in

1 tablespoon olive oil

1 large onion, diced

4 cloves garlic, minced

2 teaspoons ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

1 teaspoon chili powder

1 tablespoon tomato paste

1 cup beef broth

2 tablespoons soy sauce

2 tablespoons apple cider vinegar

12 small corn tortillas

Fresh cilantro, chopped (for garnish)

Instructions
 

Sear the Beef: In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat. Generously season the short ribs with salt and pepper. Once the oil is hot, carefully add the short ribs to the pot. Sear the ribs for approximately 3-4 minutes on each side until they are nicely browned. Remove the ribs from the pot and set them aside on a plate.

    Build the Flavor Base: In the same pot, add the diced onion. Sauté for 5-7 minutes, stirring occasionally, until the onion becomes soft and translucent. Add the minced garlic and cook for an additional minute, stirring until fragrant but not burnt.

      Add Spices and Tomato Paste: Sprinkle the ground cumin, smoked paprika, oregano, and chili powder into the pot. Stir to coat the onions and garlic with the spices. Then, add the tomato paste and mix well, stirring for an extra minute to incorporate the flavors.

        Deglaze the Pot: Gradually pour in the beef broth, soy sauce, and apple cider vinegar. Use a wooden spoon to scrape up any browned bits stuck to the bottom of the pot. This step will enhance the richness of your beef flavor.

              Warm the Tortillas: While the beef is cooling, take 12 small corn tortillas and warm them in a dry skillet over medium heat. Cook for about 30 seconds on each side, or until they are soft and pliable.

                Assemble the Tacos: On each warmed tortilla, place a generous spoonful of the shredded beef. Top with freshly chopped cilantro, diced avocado, and thinly sliced radishes for a delightful crunch.
