1 cup quinoa, thoroughly rinsed

2 cups vegetable broth (or water)

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1 ripe avocado, diced

1/2 cup red bell pepper, diced

1/4 cup red onion, finely chopped

1/2 cup corn (fresh off the cob, frozen, or canned)

1/4 cup fresh cilantro, chopped

Juice of 1 lime

2 tablespoons olive oil

Salt and pepper to taste

1/4 cup toasted pumpkin seeds (for added crunch)

Instructions
 

Cook the Quinoa: In a medium saucepan, combine the rinsed quinoa and vegetable broth (or water). Bring the mixture to a vigorous boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan, and let it simmer for about 15 minutes or until the quinoa is tender and the liquid has been absorbed. Remove from heat and set aside to cool for a few minutes.

    Prepare the Vegetables: While the quinoa is cooking, take the time to chop the cherry tomatoes, cucumber, avocado, red bell pepper, and red onion. If you're using fresh corn, carefully cut the kernels off the cob, discarding any husk.

      Mix the Dressing: In a small mixing bowl, whisk together the freshly squeezed lime juice, olive oil, and a pinch of salt and pepper. Taste and adjust according to your preference for seasoning. This dressing will add a vibrant flavor to the bowl.

        Combine Everything: In a large mixing bowl, combine the cooled quinoa, all the prepared vegetables, and the corn.
