BBQ Salmon Bowls with Mango Avocado Salsa

4 salmon fillets (6 ounces each)

1/4 cup of BBQ sauce (either homemade or store-bought)

1 tablespoon olive oil

Salt and freshly ground black pepper, to taste

1 teaspoon smoked paprika (optional, for added flavor)

For the Mango Avocado Salsa:

1 ripe mango, diced into small cubes

1 ripe avocado, diced into small cubes

1/2 red onion, finely chopped

1 small jalapeño, seeded and minced (optional, for heat)

Juice of 1 fresh lime

1/4 cup fresh cilantro, chopped

Salt, to taste

For the Bowls:

2 cups cooked brown rice or quinoa (your choice)

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 lime, cut into wedges (for serving)

Extra cilantro for garnish

Preheat the Grill: Start by preheating your grill to medium-high heat, aiming for a temperature between 375°F and 400°F.

    Prepare the Salmon: Use a paper towel to pat the salmon fillets dry, removing any excess moisture. Drizzle olive oil over both sides of each fillet, then season generously with salt, pepper, and smoked paprika if you’re using it. On the skinless side of the fillets, brush a layer of BBQ sauce for added flavor.

      Grill the Salmon: Carefully place the seasoned salmon fillets on the grill, skin-side down. Close the grill lid and allow the salmon to cook for approximately 5 to 7 minutes, depending on the fillet's thickness. At the halfway point, brush an additional layer of BBQ sauce over the fillets. Once 5-7 minutes have passed, gently flip the fillets and grill on the other side for an additional 3 to 5 minutes, or until the salmon is cooked through and flakes easily with a fork. Once done, remove from the grill and set aside to rest.

        Make the Salsa: In a medium mixing bowl, combine the diced mango, avocado, chopped red onion, minced jalapeño (if using), lime juice, chopped cilantro, and a pinch of salt. Gently mix all the ingredients to combine while being careful not to mash the avocado. Set aside for flavors to meld.
