Ingredients

2 medium sweet potatoes, peeled and cut into 1-inch cubes

1 lb (450g) boneless, skinless chicken breasts

1 cup of your favorite BBQ sauce

2 tablespoons olive oil, divided

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and black pepper, to taste

1 can (15 oz) black beans, rinsed and drained

1 cup corn (can be frozen or canned)

1 ripe avocado, sliced

½ cup red onion, finely diced

¼ cup fresh cilantro, chopped

Lime wedges, for serving

Instructions

Prepare the Sweet Potatoes:

    - Preheat your oven to 425°F (220°C).

      - In a large mixing bowl, combine the cubed sweet potatoes with 1 tablespoon of olive oil, garlic powder, smoked paprika, and a pinch of salt and pepper. Toss until they are evenly coated.

        - Spread the seasoned sweet potatoes out in a single layer on a baking sheet.

          - Roast in the preheated oven for approximately 25-30 minutes, flipping them halfway through cooking, until they are tender and lightly caramelized.

            Cook the Chicken:

              - While the sweet potatoes are roasting, heat the remaining tablespoon of olive oil in a skillet over medium heat.

                - Season the chicken breasts on both sides with salt and pepper. Add them to the skillet and cook for about 5-7 minutes on each side or until the chicken is cooked through and no longer pink in the center.

                  - Pour the BBQ sauce over the cooked chicken breasts, reduce the heat to low, and allow it to simmer for an additional 5 minutes, ensuring the chicken absorbs the delicious flavors.

                    Assemble the Bowls:

                      - Once the chicken is done, remove it from the skillet and use two forks to shred it or chop it into bite-sized pieces.

                        - In serving bowls, start layering with the roasted sweet potatoes, followed by the shredded BBQ chicken, then add the black beans and corn.

                          - Finish each bowl with slices of avocado, a sprinkle of diced red onion, and a generous handful of fresh cilantro.

                            Serve:

                              - For an added burst of flavor, squeeze fresh lime juice over each bowl before serving. Enjoy your warm and hearty BBQ Chicken Sweet Potato Bowls!
