8 oz (225g) pasta (penne or fusilli preferred)

1/4 cup balsamic vinegar

1/4 cup extra virgin olive oil

2 cloves garlic, finely minced

1 tsp Dijon mustard

1 tsp honey (substitute with maple syrup for a vegan option)

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 cup fresh spinach, roughly chopped

1/2 cup feta cheese, crumbled (optional)

Fresh basil leaves, for garnish

Toasted pine nuts, for garnish (optional)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a rolling boil. Add the pasta and cook according to the package instructions until al dente, usually around 8-10 minutes. Once done, drain the pasta and set it aside to cool slightly.

    Prepare the Dressing: In a small mixing bowl, combine the balsamic vinegar, extra virgin olive oil, minced garlic, Dijon mustard, honey, and a pinch of salt and pepper. Whisk the mixture thoroughly until it is well blended and emulsified, creating a smooth dressing.

      Combine Ingredients: In a large mixing bowl, add the cooked pasta along with the halved cherry tomatoes and roughly chopped spinach. Drizzle the balsamic dressing over the pasta mixture, and gently toss everything together until each component is well coated.

        Incorporate Cheese and Nuts: If you are using feta cheese, gently sprinkle it over the mixed pasta and fold it in lightly to avoid breaking it apart. If desired, add toasted pine nuts for an additional crunch and texture.
