Portobello mushrooms are the mature version of the common Agaricus bisporus mushroom, which also includes the white button and cremini varieties. They are characterized by their large size, firm texture, and deep, earthy flavor that makes them particularly appealing for grilling. A single portobello cap can easily replace a beef burger patty in terms of size and substance, making it a popular choice for those seeking a hearty meal without the meat.

Ingredients

4 large Portobello mushroom caps

1/4 cup balsamic vinegar

2 tablespoons extra virgin olive oil

2 cloves garlic, finely minced

1 teaspoon dried oregano

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

4 whole grain burger buns

4 slices of fresh mozzarella cheese

1 cup fresh arugula

1 large ripe tomato, sliced into rounds

Optional: pesto sauce for spreading

Instructions

Marinate the Mushrooms: In a mixing bowl, whisk together the balsamic vinegar, olive oil, minced garlic, dried oregano, salt, and black pepper until the mixture is smooth and well combined.

Prepare Portobello Caps: Gently clean the Portobello mushroom caps by wiping them with a damp cloth. Carefully remove the stems and, if desired, scrape out the gills using a spoon for a smoother texture. Place the mushroom caps into the marinade, ensuring each cap is thoroughly coated. Allow the mushrooms to marinate for at least 30 minutes, turning them halfway through for even flavor absorption.

Preheat the Grill: Heat your grill or grill pan to medium-high heat to ensure a good sear on the mushrooms.

Grill the Mushrooms: Once the grill is hot, place the marinated Portobello caps on it. Grill for approximately 5-7 minutes on each side, or until the mushrooms are tender and have appetizing grill marks. In the last minute of grilling, add a slice of mozzarella cheese on top of each mushroom cap to melt beautifully.

Toast the Buns: While the mushrooms are grilling, slice the whole grain burger buns in half. Lightly toast them on the grill until they achieve a golden brown color, enhancing their flavor and texture.

Assemble the Burgers: On each toasted bottom half of the bun, place a grilled Portobello mushroom cap topped with melted mozzarella. Add a generous handful of fresh arugula and a slice of ripe tomato on top. If you desire an additional flavor boost, spread a layer of pesto sauce on the upper bun half.

Serve: Carefully place the top half of the burger bun on each assembled burger. Serve immediately, enjoying the delightful combination of flavors in your Balsamic Grilled Portobello Burgers!
