4 boneless, skinless chicken breasts

2 cups assorted mixed vegetables (choose from bell peppers, zucchini, carrots, and asparagus)

1/2 cup balsamic vinegar

1/4 cup honey

3 tablespoons olive oil (divided)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, chopped, for garnish

Marinate the Chicken: In a large mixing bowl, combine the balsamic vinegar, honey, 2 tablespoons of olive oil, minced garlic, oregano, thyme, salt, and pepper. Whisk until well blended. Submerge the chicken breasts into the marinade, ensuring they are thoroughly coated. Cover the bowl with plastic wrap or a lid and refrigerate for at least 30 minutes, or up to 2 hours for a more robust flavor.

    Prepare the Veggies: While the chicken is marinating, wash and chop the assorted mixed vegetables into bite-sized pieces. In a separate bowl, toss the chopped veggies with the remaining tablespoon of olive oil, salt, and pepper to evenly coat them.

      Preheat the Grill or Oven: If grilling, preheat your grill or grill pan over medium-high heat. Alternatively, if you're opting to bake, preheat your oven to 400°F (200°C).
