Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

½ teaspoon chili powder

Salt and freshly ground black pepper, to taste

1 cup black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

1 cup diced tomatoes (fresh or canned)

1 cup shredded cheese (cheddar or a dairy-free alternative)

½ cup sliced jalapeños (fresh or pickled)

½ avocado, sliced (for topping)

¼ cup chopped fresh cilantro (for garnish)

Sour cream or Greek yogurt (for serving)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Prepare a baking sheet by lining it with parchment paper for easy cleanup.

Prepare the Sweet Potatoes: Thoroughly wash and scrub the sweet potatoes under running water to remove any dirt. Slice each sweet potato into ¼-inch thick rounds, trying to keep them as uniform as possible for even cooking.

Season the Rounds: In a large mixing bowl, combine the sweet potato rounds with olive oil, garlic powder, ground cumin, smoked paprika, chili powder, and a generous sprinkle of salt and pepper. Toss well until every slice is evenly coated with the seasoning mix.

Bake the Sweet Potatoes: Spread the seasoned sweet potato rounds in a single layer on the prepared baking sheet. Place it in the preheated oven and bake for 25-30 minutes. Flip the rounds halfway through the baking time to ensure they cook evenly, until they are tender and the edges are slightly crispy.

Assemble the Nacho Rounds: After baking, remove the sweet potato rounds from the oven and carefully layer each round with a spoonful of black beans, followed by corn, diced tomatoes, and jalapeños. Be generous with the toppings, and then top each with a plentiful sprinkle of shredded cheese.

Melt the Cheese: Return the baking sheet to the oven and bake for an additional 5-10 minutes, or until the cheese is completely melted, bubbly, and starting to turn golden.

Serve: Carefully remove the baking sheet from the oven and let the nacho rounds cool for a couple of minutes. Before serving, top each round with slices of avocado, a sprinkle of fresh cilantro, and a drizzle of sour cream or Greek yogurt.

Enjoy: Serve these delightful baked sweet potato nacho rounds warm as a healthy yet indulgent twist on traditional nachos. Perfect for sharing or savoring all on your own!
