1 cup pumpkin puree (canned or fresh)

1/4 cup unsweetened applesauce

1/4 cup vegetable oil

1 cup brown sugar, packed firmly

1/2 cup granulated sugar

2 large eggs, room temperature

1 teaspoon vanilla extract

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/2 teaspoon ground ginger

1/4 teaspoon ground cloves

1/2 teaspoon salt

1/2 cup powdered sugar (for the glaze)

1-2 tablespoons milk (for the glaze)

Optional: Extra ground cinnamon for dusting

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Prepare a donut pan by greasing it lightly or using a silicone donut mold for easy removal.

    Mix Wet Ingredients: In a large mixing bowl, add the pumpkin puree, unsweetened applesauce, vegetable oil, packed brown sugar, granulated sugar, eggs, and vanilla extract. Whisk the mixture vigorously until it's smooth, creamy and well combined.

      Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, ground cloves, and salt until uniformly mixed.

        Combine Wet and Dry Mixtures: Gradually incorporate the dry ingredients into the wet mixture. Stir gently until just combined; avoid overmixing for tender donuts—it's fine if there are a few lumps.

          Fill the Donut Pan: Using either a piping bag or a ziplock bag with the corner snipped off, fill each cavity of the donut pan about two-thirds full with the batter. This allows enough space for the donuts to rise.
