Ingredients

8 oz (225g) uncooked penne pasta

8 oz (225g) feta cheese block

2 cups cherry tomatoes, halved

3 cups fresh spinach, roughly chopped

4 cloves garlic, minced

1/4 cup extra-virgin olive oil

1 tsp red pepper flakes (adjust based on your spice preference)

Salt and freshly ground black pepper, to taste

1/2 cup grated Parmesan cheese

Fresh basil leaves, for garnish

Zest and juice of 1 lemon (optional for brightness)

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C). This will ensure your dish cooks evenly.

Prep the Baking Dish: In a large baking dish or an oven-safe skillet, combine the halved cherry tomatoes, roughly chopped spinach, and minced garlic. Drizzle the mixture with extra-virgin olive oil. Then, season with red pepper flakes, salt, and freshly ground black pepper. Toss all the ingredients together to ensure they are well-coated with the oil and seasonings.

Add Feta: Create a well in the center of the vegetable mixture and place the block of feta cheese inside. Drizzle a little extra olive oil over the feta and add a pinch of salt and pepper on top to enhance its flavor.

Bake: Transfer the dish to the preheated oven and bake for 25-30 minutes. The tomatoes should become blistered, and the feta should soften and take on a slight golden hue.

Cook the Pasta: While the feta and tomatoes bake, bring a large pot of salted water to a rolling boil. Add the penne pasta and cook according to the package instructions until al dente. Once cooked, drain the pasta and set it aside.

Combine Ingredients: After removing the baking dish from the oven, use a fork to gently mash the softened feta. Mix it with the roasted tomatoes and garlic to create a creamy sauce. Add the cooked penne and stir well, ensuring all the pasta is coated with the delicious sauce.

Add Spinach and Season: Fold the chopped spinach into the pasta mixture until it wilts slightly. Taste and adjust seasoning with more salt, black pepper, or red pepper flakes to suit your preference.

Serve: Spoon the pasta into serving plates. Sprinkle generously with grated Parmesan cheese, garnish with fresh basil leaves, and if desired, finish with a sprinkle of lemon zest and a drizzle of lemon juice for added brightness.

Enjoy: Serve warm and enjoy your revitalized baked feta pasta masterpiece!
