Ingredients

For the Chicken:

4 boneless, skinless chicken breasts

1 cup whole wheat breadcrumbs

1/2 cup grated Parmesan cheese

1 teaspoon Italian seasoning

1 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

2 large eggs

1 cup marinara sauce

1 cup shredded mozzarella cheese

Fresh basil leaves, for garnish

For the Zucchini Noodles:

4 medium zucchinis, spiralized into noodles

2 tablespoons olive oil

1/2 teaspoon salt

1/4 teaspoon black pepper

1 teaspoon Italian seasoning

Instructions

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Chicken:

      - In a shallow dish, mix together the whole wheat breadcrumbs, grated Parmesan cheese, Italian seasoning, garlic powder, salt, and black pepper until well combined.

        - In a separate shallow bowl, beat the eggs until smooth. Take each chicken breast, dip it into the beaten eggs, allowing any excess to drip off. Then, coat each breast in the breadcrumb mixture, pressing down gently to ensure a thorough and even coating.

          Bake the Chicken:

            - Arrange the breaded chicken breasts on a baking sheet lined with parchment paper. Bake in the preheated oven for 20 minutes.

              - After 20 minutes, carefully remove the baking sheet from the oven. Spoon marinara sauce generously over the top of each chicken breast, then sprinkle shredded mozzarella cheese on top.

                - Return the chicken to the oven and bake for an additional 10 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F) and the cheese is melted, bubbly, and slightly golden brown.

                  Prepare the Zucchini Noodles:

                    - While the chicken is baking, heat the olive oil in a large skillet over medium heat. Once hot, add the spiralized zucchini noodles into the skillet. Season with salt, black pepper, and Italian seasoning.

                      - Sauté the noodles for about 3-4 minutes, stirring occasionally, just until they are slightly tender yet still have a slight bite (al dente). Once done, remove from heat and set aside.

                        Serve:

                          - To plate the dish, create a bed of sautéed zucchini noodles on each plate. Top it with one of the baked chicken breasts and garnish with fresh basil leaves for a pop of color and flavor. Serve with additional marinara sauce on the side for those who want extra sauce.
