Ingredients

1 large flatbread (can be store-bought or homemade)

1 medium ripe pear, thinly sliced

1 tablespoon unsalted butter

2 tablespoons brown sugar

1 teaspoon fresh thyme leaves (plus extra for garnish)

1 round (8 oz) Brie cheese

1/4 cup shredded mozzarella cheese (optional, adds a nice texture)

2 tablespoons honey

1/4 teaspoon freshly cracked black pepper

Balsamic glaze for drizzling

Pinch of salt

Instructions

Preheat the Oven: Set your oven to 400°F (200°C) to prepare for baking.

Caramelize the Pears: In a medium skillet, melt the unsalted butter over medium heat. Once melted, add the brown sugar. Stir and cook until it begins to bubble, creating a caramel-like syrup. Add the thinly sliced pear and thyme leaves. Sauté for about 5-7 minutes, or until the pears are tender and beautifully caramelized. Remove the skillet from heat and set aside.

Prepare the Flatbread: Place the flatbread on a baking sheet lined with parchment paper for easy cleanup. If desired, lightly brush the surface with olive oil for added flavor and crispiness.

Add the Cheese: Optionally, slice the Brie cheese in half horizontally to create two thinner rounds. Position the Brie in the center of the flatbread. If you’re using mozzarella, sprinkle it evenly around the Brie to enhance the cheesiness.

Top with Pears: Spread the caramelized pears evenly over the Brie. Make sure to spoon some of the delicious caramel sauce from the skillet on top for an extra layer of sweetness and flavor.

Season and Bake: Lightly sprinkle freshly cracked black pepper and a pinch of salt across the flatbread. Transfer the baking sheet to the preheated oven and bake for 12-15 minutes, or until the flatbread is golden and crispy, and the Brie is beautifully gooey.

Drizzle and Serve: Once baked, remove the flatbread from the oven and gently drizzle honey over the top. Follow this with a drizzle of balsamic glaze for a tart contrast. Garnish with fresh thyme leaves for a pop of color and flavor.

Slice and Enjoy: Allow the flatbread to cool for a couple of minutes before slicing into wedges or squares. Serve warm as an inviting appetizer or a delightful light meal.
