Ingredients
  

4 medium flour tortillas

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1 cup cooked chicken, shredded (or substitute with beans for a vegetarian option)

1 cup bell peppers, diced (any variety to add color)

1/2 cup red onion, thinly sliced

1/4 cup corn (can use canned or frozen)

1 tsp ground cumin

1 tsp chili powder

1/2 tsp garlic powder

Salt and pepper to taste

2 tbsp olive oil (for frying)

Optional toppings: sour cream, salsa, guacamole, fresh cilantro for garnish

Instructions
 

Prep Your Filling: In a large mixing bowl, combine the shredded chicken (or beans) along with the cheddar and mozzarella cheeses, diced bell peppers, corn, and sliced red onion. Sprinkle in the ground cumin, chili powder, garlic powder, and season with salt and pepper. Stir well until all ingredients are evenly mixed together.

    Heat the Pan: Place a large skillet over medium heat and pour in 1 tablespoon of olive oil. Allow the oil to heat for about one minute until shimmering.

      Assemble the Quesadilla: Lay one tortilla flat in the hot skillet. On one half of the tortilla, spoon a generous amount of the filling mixture, spreading it evenly. Carefully fold the tortilla over to create a half-moon shape, pressing gently to seal.

        Cook the Quesadilla: Cook the quesadilla for approximately 3-4 minutes on one side, until it turns golden brown and the cheese begins to melt. Using a spatula, flip the quesadilla carefully. Add the remaining tablespoon of olive oil to the skillet, and cook the other side for another 3-4 minutes until nicely browned.

          Repeat: Once cooked, remove the quesadilla from the skillet and transfer it to a cutting board. Repeat the assembly and cooking process with the remaining tortillas and filling until all quesadillas are made.

            Slice & Serve: After cooking all the quesadillas, slice each one into triangles for easy serving. Enjoy warm with an array of optional toppings such as sour cream, salsa, guacamole, or a sprinkle of fresh cilantro to elevate the flavors.
