1 cup cherry tomatoes, diced

1/2 cup canned black beans, thoroughly rinsed and drained

1/2 cup corn kernels (you can use canned or frozen that have been thawed)

1/4 cup red onion, finely chopped

1/4 cup fresh cilantro, chopped

Juice of 1 lime

1 teaspoon ground cumin

Salt and pepper, to taste

1/2 cup feta cheese, crumbled (optional for added flavor)

1/4 cup Greek yogurt or sour cream (for drizzling)

Prepare the Avocados: Begin by slicing the avocados in half lengthwise. Carefully remove the pit from each half. Using a spoon, gently scoop out a small portion of the avocado flesh from each half to create a well for the filling. Place the scooped avocado into a mixing bowl, ensuring not to discard any.
