2 cups rolled oats

1 cup unsweetened applesauce

1 medium apple, peeled and diced (preferably Granny Smith or Honeycrisp for a tart flavor)

1/2 cup almond butter (alternatively, peanut butter can be used)

1/4 cup honey or maple syrup (for natural sweetness)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon (for warmth and flavor)

1/2 teaspoon sea salt (to enhance overall taste)

1/4 teaspoon baking powder (for lightness)

1/2 cup chopped nuts (such as walnuts or pecans) – optional

1/4 cup raisins or dried cranberries – optional

Instructions
 

Preheat the Oven: Start by preheating your oven to 350°F (175°C). Prepare an 8x8-inch baking pan by lining it with parchment paper, ensuring there’s some overhang on the edges for easy removal later.

    Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, ground cinnamon, sea salt, and baking powder. Stir well with a spoon to make sure the baking powder is evenly distributed throughout the dry mixture.

      Mix Wet Ingredients: In a separate bowl, whisk together the unsweetened applesauce, almond butter, honey (or maple syrup), and vanilla extract until the mixture is smooth and fully blended.

        Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Add in the diced apple, and if you choose, mix in the optional chopped nuts and dried fruit. Stir everything until the oats are completely moistened and the mixture is well combined.
