1 medium head of cauliflower, cut into bite-sized florets

½ cup all-purpose flour (or gluten-free flour for a gluten-free option)

½ cup cornstarch

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon smoked paprika

½ teaspoon salt

½ teaspoon black pepper

1 cup cold water (adjust as needed for batter consistency)

½ cup sweet chili sauce

1 tablespoon soy sauce (or tamari for a gluten-free option)

1 tablespoon rice vinegar

Optional: Chopped green onions and sesame seeds for garnish

Prepare the Cauliflower: Start by rinsing the cauliflower thoroughly under cold water. Slice it into bite-sized florets, ensuring they are roughly the same size for even cooking.

    Make the Batter: In a large mixing bowl, whisk together the flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Slowly pour in the cold water, whisking continuously until the batter reaches a smooth consistency, akin to pancake batter. It should be thick enough to cling to the cauliflower.

      Coat the Cauliflower: Take each cauliflower floret and dip it into the batter, ensuring that it is completely covered. Gently shake off any excess batter to prevent clumping.

        Preheat the Air Fryer: Preheat your air fryer to 375°F (190°C) for about 5 minutes, ensuring it is fully heated to achieve that crispy texture.

          Air Fry the Cauliflower: Carefully place the battered cauliflower florets in a single layer in the air fryer basket. Ensure there is space between them to allow for proper air circulation and even cooking. If needed, cook in batches based on the size of your air fryer.
