Ingredients

For the Garlic Butter Shrimp:

1 lb large shrimp, peeled and deveined

3 tablespoons unsalted butter

4 cloves garlic, minced

1 teaspoon chili flakes (adjust to taste)

Salt and freshly cracked black pepper, to taste

Juice of 1 fresh lime

2 tablespoons fresh cilantro, chopped

For the Zesty Slaw:

2 cups green cabbage, finely shredded

1 cup red cabbage, finely shredded

1 medium carrot, grated

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon fresh lime juice

1 teaspoon honey

Salt and freshly cracked black pepper, to taste

For the Tacos:

8 small corn or flour tortillas

Lime wedges, for serving

Extra fresh cilantro, for garnish

Sliced radishes (optional), for garnish

Instructions

Prepare the Zesty Slaw: In a large mixing bowl, combine the finely shredded green cabbage, red cabbage, and grated carrot. In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, fresh lime juice, honey, salt, and pepper until smooth. Pour the creamy dressing over the cabbage mixture and toss gently until all the vegetables are well coated. Set aside to allow the flavors to meld for about 10 minutes.

Cook the Garlic Butter Shrimp: In a large skillet, melt the unsalted butter over medium heat. Once the butter is melted and begins to bubble, add in the minced garlic and chili flakes. Sauté for about 1 minute, stirring frequently, until the garlic becomes fragrant, taking care not to let it brown.

Add the Shrimp: Increase the heat to medium-high and add the peeled and deveined shrimp to the skillet. Season with salt and freshly cracked black pepper. Cook the shrimp for about 2-3 minutes on one side until they turn a beautiful pink color, then flip and continue cooking for an additional 1-2 minutes until fully cooked and opaque.

Finish the Shrimp: Once the shrimp are cooked through, remove the skillet from heat. Drizzle the shrimp with fresh lime juice and toss in the chopped cilantro, ensuring the shrimp are well coated in the flavorful garlic butter sauce.

Warm the Tortillas: In a separate dry skillet, warm each tortilla over medium heat for approximately 30 seconds on each side, or until they become pliable and slightly toasted.

Assemble the Tacos: On each warm tortilla, add a generous spoonful of the zesty slaw followed by a hearty portion of the garlic butter shrimp. If desired, top with additional fresh cilantro and sliced radishes for added crunch and color.

Serve: Serve the tacos immediately, accompanied by lime wedges on the side for an extra burst of citrusy flavor. Enjoy the delightful combination of spicy and zesty flavors!
