30-Minute Beef and Vegetable Stir-Fry

1 lb (450g) beef sirloin, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil (divided)

1 bell pepper (any color), sliced into strips

1 cup broccoli florets, cut into bite-sized pieces

1 medium carrot, julienned

1 cup snap peas, trimmed

3 cloves garlic, minced

1 tablespoon ginger, freshly grated

2 tablespoons oyster sauce

1 tablespoon sesame oil

Cooked rice or noodles (for serving)

Optional garnish: sesame seeds and sliced green onions

Marinate the Beef: In a mixing bowl, combine the thinly sliced beef with the soy sauce and cornstarch, stirring well to coat the beef evenly. Allow the beef to marinate for about 10 minutes while you prep the vegetables.

    Prepare the Vegetables: As the beef marinates, wash and chop the bell pepper, divide the broccoli into smaller florets, julienne the carrot, and trim the snap peas. Set all the prepared vegetables aside for easy access.

      Heat the Oil: In a large skillet or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Wait until the oil is shimmering to ensure it's hot enough for cooking.

        Cook the Beef: Carefully add the marinated beef to the skillet in a single layer. Let it cook undisturbed for 2-3 minutes until it develops a nice brown crust on one side. Flip the beef pieces and cook for an additional 2 minutes until they're nearly cooked through. Once browned, transfer the beef to a plate and set aside.

          Stir-Fry the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Stir in the minced garlic and grated ginger, sautéing for about 30 seconds until aromatic. Next, add the bell pepper, broccoli, carrot, and snap peas to the skillet. Stir-fry the vegetables for approximately 5 minutes or until they are tender-crisp and vibrant in color.

            Combine and Season: Return the cooked beef to the skillet with the sautéed vegetables. Pour in the oyster sauce and sesame oil, tossing everything together for an additional 2-3 minutes until the beef is fully cooked and well-coated with the sauce and flavors meld together.

              Serve: Remove from heat and serve the sizzling stir-fry immediately over a generous bed of cooked rice or noodles. Optionally, sprinkle sesame seeds and sliced green onions on top for added texture and flavor.
