Ingredients

1 lb (450g) flank steak, thinly sliced against the grain

2 cups fresh broccoli florets

1 red bell pepper, thinly sliced

1 cup snap peas, ends trimmed

3 tablespoons vegetable oil (divided)

3 cloves garlic, finely minced

1 tablespoon fresh ginger, finely minced

3 tablespoons low sodium soy sauce

1 tablespoon oyster sauce

1 tablespoon cornstarch

1 tablespoon cold water

1 teaspoon sesame oil

Cooked rice or noodles, for serving

Optional garnishes: toasted sesame seeds and chopped green onions

Instructions

Marinate the Beef: In a medium bowl, combine the thinly sliced flank steak with 2 tablespoons of soy sauce, cornstarch, and cold water. Stir the mixture until the beef is evenly coated, then let it marinate for approximately 10 minutes while you prepare the vegetables.

Prepare the Vegetables: Rinse the broccoli florets under cold water. Cut larger florets into bite-sized pieces, slice the red bell pepper into thin strips, and trim the ends off the snap peas. Set all the prepared vegetables aside.

Heat the Pan: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat until shimmering. Add the marinated beef in a single layer, ensuring not to overcrowd the pan. Cook for about 2-3 minutes until the edges are browned. The beef should still be slightly undercooked. Remove from the skillet and transfer to a plate.

Cook the Vegetables: In the same skillet, add the remaining tablespoon of vegetable oil. Add the minced garlic and ginger, stirring constantly for about 30 seconds or until fragrant, taking care not to let them burn. Next, add the broccoli, red bell pepper, and snap peas. Stir-fry for about 3-4 minutes until the vegetables are bright in color and remain tender-crisp.

Combine and Sauce: Return the partially cooked beef to the skillet with the vegetables. Pour in the remaining tablespoon of soy sauce and oyster sauce, followed by the sesame oil. Toss all the ingredients together to ensure they are well coated in the sauce, cooking for an additional 2 minutes until the beef is fully cooked and everything is well combined.

Serve: Serve the sizzling beef and broccoli stir-fry over bowls of warm cooked rice or noodles. For added visual appeal, garnish with a sprinkle of toasted sesame seeds and finely chopped green onions if desired.
